Chocolate Chip Banana Pancakes with a Cinnamon Apple Topping

ITS PANCAKE SATURDAY….OR SUNDAY…HOW ABOUT PANCAKE EVERYDAY! I love pancakes, its such a comforting food, and if you make it right…so healthy!! A stack of pancakes is a perfect way to start your day (that rhymed…hehehe…I’m not funny)!

I was experimenting in the kitchen this morning and really wanted to create my own pancake recipe. I always use Thriving On Plants pancake recipe, which is BTW so delicious! Highly recommend! But I wanted to do some experimenting myself and created this perfect, warm, moist (hate that word but had to use it because these pancakes are truly perfectly moist), chocolatey, gooey, and delicious Chocolate Chip Banana Pancakes!

These pancakes are perfect to enjoy on a nice cold fall/autumn day because they add a nice cinnamon touch with the Cinnamon Apple Topping! I wanted to make something that fits this upcoming season and what better way to suit a fall season then warm cinnamon apples! It goes great with the chocolatey taste of the pancakes and brings all the spices together!

Are you ready to indulge in this beautiful creation?! Okay, heres what your going to need!


Pancakes – 

1 cup oats

1 cup almond milk (or any other plant based milk)

1 ripe banana (make sure its soft and has brown spots!)

1 tsp cinnamon

1 tsp vanilla extract

1/4 cup dairy-free chocolate chips (I used Chocolate Dream)

2 TBSP flax seed meal (optional but recommended for extra nutrients!)

Cinnamon Apple Topping – 

1 small apple

1 TBSP brown rice malt syrup (or agave)

1/2 TBSP coconut sugar


1 tsp cinnamon

Combine all of pancake ingredients in a high speed blender except for the chocolate chips. Blend until thick and smooth. Make sure not to over blend or the batter will get too thin! Once combined, pour mixture into a small bowl. Fold in chocolate chips. With a ladle pour about 1/4 of mixture onto a greased (or not greased if pan is nonstick) pan at low to medium heat (depending on how hot your stove gets). You will know when to flip your pancakes when the outer rim of the batter is matte and the inside is a little bubbly!

While pancakes are cooking you can prepare your Cinnamon Apple Topping (make sure to always keep an eye on your pancakes so THEY DONT BURN! 🙂 trust me I have made that mistake Chop up your apple into small pieces and place in a medium sauce pan on your stove on medium heat. Cover your apples with water and place back on stove. You can now add in the rest of the ingredients, brown rice malt syrup, coconut sugar, & cinnamon. Cook apples until nice and soft! If there is any liquid left over in the pan then strain the apples in a colander.

Once the pancakes and Cinnamon Apple toppings are done you can now enjoy this delicious breakfast! I also topped my pancakes with Organic maple syrup, cocoa nibs, coconut sugar, and raw steel cut oats! 🙂
